I believe you should be able to boot Ubuntu off the disk you have.

WRT figuring out devices, to be honest, I generally take a look in the dev
folder and look at for the sd* and hd* drives. I usually end up checking
before I add the target drive and then again after I've added the target so
I know what that particular machine is up to in terms of its device
allocations. I haven't come across a tool like the one you are asking about
but it occurs to me that the disk management tools in the Ubuntu System menu
should be able to give you a good idea about the devices you'll need for the
command line.
