Do you actually want to Lots of control over volume/gains etc on each track
or just somethign that can handle 4 to 8 inputs with minimul effort?

I've herd good things about both of these but I spend a shit load of time on
m-audio message boards so it may be a bit bias.

Fast Track Ultra
 High-speed 8 x 8 USB 2.0 Interface with MX Core DSP Technology
USD 449.95

Fast Track Pro
 4 x 4 Mobile USB Audio/MIDI Interface with Preamps
USD 249.95

Going firewire route is almost twice as expensive but I'm not exactly sure
you get enough out of it with simple applications.

NRV10
 10 x 10 FireWire Digital Audio Interface | 8 x 2 Analog Mixer with Effects
USD 899.95

I personally use a tascam us-144 which doesn't have as many inputs
unfortunately but I love it.
