I'm their IT consultant, they can never monitor me. And why should I not

If you are looking to monitor *applications* that's one thing.  Looks
like you want to monitor network traffic.  There are a number of
solutions available to monitor everything you listed at the network
level.

Also, you should really think twice about working with anyone who
treats their employees this way.  Even if they are not monitoring you.
