Having experience with both VMWare and Hyper-V, I would say for
anything new, go with Hyper-V if it's an option.  VMWare is great, but
I liken them to Novell 25 years ago.  Great products, but because it's
proprietary and they nickel and dime for every feature, the TCO gets
high pretty quickly if you need anything beyond their basic
hypervisor.  With Hyper-V, it's all included with Windows Server out
of the box.  Microsoft has been fine-tuning Hyper-V in their Azure
cloud for the past several years, and Server 2012 is a rock-solid
platform and Hyper-V has done some serious growing up in the process.
I think VMWare will continue to have a place for a while, but
personally I'm not deploying anything new on vSphere.
