Danger Danger Will Robinson!

my son the "almost chef" warned us to never defrost meat out on the counter

the danger zone is between 40F and 140F -
if food is in that temp range for two hours, it's an ideal breeding ground
for really nasty bacteria

The outside layer of the meat will thaw first, and have hours at high room
temperature before the inner layer thaws.

So when you're thawing it for dinner tomorrow, do it in the refrigerator.
