They take Pacific whiting or pollock, mince it, wash it, then heat it so it gels, and add ingredients like Sorbitol, sugar, polyphosphate, protease inhibitor, water, salt, coloring, and flavoring, then extrude it under pressure, and steam it, resulting in a product that stays together as if natural.
