I've done something very similar to what you are wanting to do. All you need to do is set up a DSN on Host 2 that points to the Host 1 database. The only trick to this is that you CAN'T use the CF Administrator to set up this DSN. You must use the Window's Control Panel "Data Sources (ODBC)" Management Tool. You set up a System DSN from here. Then you can go back to the CF Administrator and the new DSN should be there.
When I did this before, it was on a CF4.5 server. For the new CFMX server, I think you would "set up" a new "ODBC" DSN, and this should list all the "System" DSN's set up on the server.
