now() returns the server's date and time.. so wouldn't you subtract 5 hours? So if it's 5PM in Hawaii and 10PM in Delaware and your server is in Delaware it'll return 10PM. Then if you're adding 5 hours to 10PM 1/8 it'll return 3AM on 1/9
