Have you looked at the mail headers from a message generated by CFMail to
see if they indeed have an incorrect time or time zone in the 'date' header?
If I'm not mistaken, the date and time should be the actual local time and
the time zone, in your case, should be +0100.
I'm not sure if it's possible that the mail server could change the time
setting, but you should also double check the time and time zone settings on
the mail server that you've got CF using to send mail.
