I'm not sure if you're using CF7 or CF6, but in CF7, just make sure you have
the latest updater, on cf6 there is a specific hotfix for server stops
responding:

Specifically this hotfix:

http://www.macromedia.com/cfusion/knowledgebase/index.cfm?id=tn_19536

Macromedia has created a hot fix to address a problem with ColdFusion MX 6.1
Updater in the server configuration (which uses an internal version of JRun
4) or the J2EE configuration running on JRun. If a request is sent to
ColdFusion MX before the ColdFusion application is fully loaded and running,
ColdFusion will not serve requests.

And this one:

Macromedia JRun 4.0 can hang and refuse to service requests, even under
light load, when the thread pool reaches 0. When this happens, JRun does not
re-initialize the thread pool and therefore cannot take requests.
