Session vars chew up a ton of memory? I would have to disagree with this, at
this statement could put a negative view of session vars for new CF
developers. Session variables use no more memory than any other variable
available to you on the ColdFusion server. And in this day and age where web
servers typically have a gigabyte or more of ram, even if each guest to your
site is carrying 25k of session variables (and mind you, this is ALOT OF
DATA) your server will be just fine on memory, up to 4,000,000 concurrent
users. This is not likely at all, and since ColdFusion very thoughtfully
cleans the session variables out for you at a pre-determined expiration
time.

I would estimate a 5 page form (w/ 5 fields on each page) to average about
6k of memory, assuming there are no "free-for-all" fields. I'm all for using
hidden form variables, but if you've paid $4500 for this application server,
why not use it for what it was built? They didn't add "state-management"
into ColdFusion as an afterthought!

Well Application variables are global. Session vars chew up a ton
of memory, when you're really not interested in the users long term
persistence. I would says just use form vars, and with each page store
the previous pages stuff hidden. This is of course assuming a high traffic
site. If it's just for a few people here and there, then the convenience
of sessions vars may override memory concerns.
