I would agree that is the best way to handle the products with options,
it's extremely flexible. Just for the record, doing it this way
requires some thought be put into how to do sorting of options. Can't
have large above small in the list...

What about categories/subcategories though? I'm using a table
something like this. However I'm always ears for a better way.
