No, you can run as many different web servers with CF 5 (or CFMX) as you
like. I don't know why you'd want to run them simultaneously, though.

Install your web servers, install CF, and configure CF to work with each web
server. During the CF install, you can have it work with IIS automatically,
then configure it manually to work with Apache. There's no Apache 2 module
for CF 5 from MM, but there is a third-party one here, which works fine on
my (low-traffic) laptop:
