The accept attribute is optional. If you want to accept any type of file, just exclude the accept attribute.

I get this annoying "The MIME type of the uploaded file (image/pjpeg) was not accepted by the server. Please verify that you are uploading a file of the appropriate type." in my cfcatch. Any ideas...is there some setting actually serverside I need to make? Thanks!
