"Professional" is basically renamed to "Standard". The real difference is that CF MX Enterprise and CF MX for J2EE have been merged and are now both CF MX Enterprise. During installation you get to choose if you want to deploy the way that used to be CF MX J2EE or the way that used to be CF MX Enterprise. For hosting this is a very nice change, instead of just Sandboxes in Enterprise Edition, I can now both run multiple instances and use Sandboxes inside those instances.
