What's wrong with Ethereal? Admittedly, the interface is a tiny bit clunky, but it works very well for this sort of thing. For HTTP traffic specifically, I like EffeTech's tool (http://www.effetech.com/), but it's not free - it's about $40 or so. It has a lot of conveniences that you don't find in your standard packet sniffer.
