ColdFusion does not look up MX records for sending mail although you can specify the server in the tag (however, most servers will not accept the mail directly for several reasons including no "Received" header and usually the HELO does not match RDNS, etc.) ColdFusion version 6.0 and lower only allowed you to specify a single email server but 6.1 allows for multiple servers.
