replacing characters

I have some apps that let's user input data intoa databases. Users ofter write a document in word then paste it's contents into a form field and submit to the website. Problem I am seeing are characters such as ', ", - from Word get inputed as bizare symbols so when the test is displayed on the web don't looks somethikes this don^^?'t.  any ideas
