We do something similar. We have a set of report-building CFCs where you can populate paragraphs of text and arrays of data, then choose to (re-)display the report as HTML, RTF, PDF or CSV, with the arrays shown as tables or charts. Some kind of object-oriented approach is ideal for this. I can't see any sense in the assertion that you shouldn't use CFCs for UI. Why on earth not? In fact, in my experience the object-oriented approach is more useful for UI than it is for business data processing - although of course this is far more true when you're programming an interactive "stateful" environment (ActionScript, JavaScript etc).
