The way I do it is to use my CFX_POP3 Pro tag rather than the built in CFPOP tag because it's got bayesian filtering capabilities built in so I train them to recognise bounces as opposed to spam and score them appropriately.
When I process the mailbox for bounces, I don't have to do half as much work in terms of determining whether or not the mail is a bounce message and processing the e-mail addresses then becomes far easier as to concur with Michael, the formats for bounce messages are pretty limited.
