Scott, It's a little fuzzy now, but we had a problem with CFDocument initially after upgrading to 7. We resolved it by removing the other JVM(s) that were installed before the install of 7, then specifically installing the version CF 7 required (if it wasn't done already). Has worked flawlessly since. I would suggest looking at the JVM issue first.
