House of Fusion was running 5. I beta tested 6 but decided not to move to it. I beta tested 6.1 but decided not to move to it. I beta tested 7 and have been running it live on House of Fusion since early in the beta and I loved it. It's been up for over a year now and when this question comes up I throw the full weight of my sites and name behind an upgrade from 5 or 6/6.1 to 7. Well worth it for the performance alone. If you can get a copy of enterprise, the use of the gateways is a killer feature, especially the async gateway. I'm lobbying Macromedia to move that into every version of CF, not just enterprise. It's a feature EVERYONE should have access to.
