Well guys, after perusing the docs a bit, I found a nifty new addition to mx7. You can pass a csv list to the selected attribute of cfselect which pre-selects multiple items.I combined what Jeff showed me, and this, which almost made it work. You can't do it when the format is XML. You CAN however when the format is Flash. Guess I'll just leave this as a flash form and leave the headache behind.
