Try to get a stack trace (technote 18339 - http://www.macromedia.com/cfusion/knowledgebase/index.cfm?id=tn_18339)
When you see it start to spike, set focus to the DOS Window and hit Control+(Pause/Break) (not control-C which everyone does by instinct - that kills JRun). One thing: For 6.1 at least, you don't have to run jrun from the command line; if you change the service to "interact with desktop" and restart it, it will open a command window and you can ctrl-break in it to create the dumps, which go the one of the jrun log files. You need to be able to connect to the machine's desktop to use this approach though.
