OK I presume you have a different login for each database then and thus can only access one at a time. You can connect to same servers with different names by using aliases.
To use an alias run the "client network utility" form your sql server folder. Add a new alias Select TCP/IP Type a name for the alias, and eneter the REAL server IP or FQDN in the Server field. You can now add a new SQL server connection to Enterprise manager using this alias. Are you referring to physical server, or instances of SQL server. Neither of these can be created via enterprise manager. A new server requires hardware and an actual machine. A new instance requires you install sql server again and choose to deploy a new instance.
