I would suggest you not use user-defined columns but instead you have a
table that contains user-defined data.  For example, instead of having
userdefined1, userdefined2, userdefined3, etc. in your users table, you
have a separate table called userFields.  Each row would have the user
ID and any other fields to describe the user defined field (title,
description, etc).  Then you'd join the two tables to get the extra
fields.  Am I making sense?
