It shouldn't matter which version you're using, as they're all identical internally (they even emulate the same hardware). VMware GSX Server was the entry-level server product, but that's been replaced with the free VMware Server, which is still in beta. VMware ESX Server is the enterprise server product; it provides its own stripped-down Linux OS.
