Suse has a great control panel called yast that makes a lot of tasks easier, but anyone using linux is going to want/have to learn the command line stuff after awhile. Also I have heard a bunch or good usability stuff about ubuntu. Coldfusion is not supported on ubuntu, but it is supported on Suse 9. The newest version of Suse is 10 however.
