You use <CFMAILPARAM>.  An example follows:

<CFMAIL TO="recipient" SUBJECT="msg_subject" FROM="sender"  ...more
attibutes...>

    <CFMAILPARAM NAME="Reply-To" VALUE="email address">

    ...contents of e-mail...

</CFMAIL>
