Apache and IIS can run on the same box. My suggestion would be to set up apache on a separate ip (run the IIS tool to make it non-greedy and not take up all the addresses), set up apache on that IP, connect it to CF and do your testing. Once you're satisfied that everything is working, assign the rest of the IPs to apache, stop IIS and restart apache. Total downtime should be only a few seconds...
