Make sure that this is enough. I'm not sure if this is true. I don't have a lot of experience with VMWare ESX, but running VMWare server on top of Windows, if I allocate 2GB to a VM, but the VM only uses 256mb, that's all that it will use, the host or other VMs can use the free RAM.
