It really is that easy, in general, to get started with CF.
Can't speak for Cartweaver in particular, but they've been around a while.

No, they'll be fine as is. 
A ColdFusion server will serve up HTML (well, all non-CF) files unmodified.
You can add tiny bits of CF code if needed, but I imagine you commerce site 
will be all under one URL, or under a brand new domain 
(shop.yourdomain.name).
