The question "how many sites does a CF developer manage" is hard to answer because it's kind of random and meaningless. It doesn't take into consideration anything like complexity, traffic, users, etc.
I mean, I "manage" something like 8 web sites at work. But really only 2-3 of them require any kind of interaction on my part on an ongoing basis. We're working on documenting all of the applications in our main web site (www.it.dev.dukeedu) and there's a lot.. not just the ones you see in the navigation but quite a few others as well.
