Hi CF8 doesnt overwrite CF7. By default the default location for the standalone config is "C:\Coldfusion8\". Also it is not recommended to overwrite CF7.
CF7 and CF8 can coexist on the same machine. None of the CF7 services get affected by CF8 installation, as CF8 related services runs on different ports..hence they can coexist. But once you have migrated from CF7 and your sites are up and running on CF8 and if you don't feel need for CF7 installer then you can uninstall it.
