I'm not a server guy, by any means. But I assume that all these Windows/CF
shared servers (whether CT or someone else) are either using host headers or
an IP to bind your main account/domain to a virtual Web site in IIS. In my
limited understanding, to point a subdomain to another spot in your
directory space, you'd need yet another virtual site in IIS bound to the
host header.

If that's correct, I can see why it would be a pain in the ass for a large
hosting service. Out of curiosity, what hosting services offer a way to
control subdomains this way?
