My setup so far, and I'm not comfortable with it, is... I run nightly MySQL backups, zip em, encrypt em, and email to a google account. My cf code is all in SVN on a different host, so I have all my code. Email is another story. I don't really have a good off-site plan for that, although based on these events, I have moved some email to a different host.
