I should have been more specific -- I wasn't actually using a filter. 

When I DID look at the filters, then I saw the 'maxrows' name/value in there 
(where the default is 100).

So, to solve the problem, just add a <cfexchangefilter name="maxrows" 
value="9999"> and you should be good. I can't seem to find a way to say 'all of 
the rows'
