UML is just a modeling language, and you are correct - it is most fequently
used in OO languages, as it lends itself to this well.  An entire CF
Application or site could lend itself very well to this structured
representation, especilly if it's been designed with code reusabiity in mind
(i.e. custom tags and/or reusable templates).  It shouldn't matter whether
or not you are using CFOBJECT in the application, though.  If your
application lends itself well to this sort of documentation/representation,
great.  If not, maybe flow charting or using some other site layout model
would work better for you.  I haven't done a lot of UML Modeling, and don't
feel qualified to recommend any books on the matter, however.

CF is most definitely not OO
You could try it in combination with the CFOBJECTS coding standard, which
purports to make CF OO compliant.
