I use MS SQL Server, but I think you could use something like this.  
<cfqueryparam value="#now()#" CFSQLType="cf_sql_timestamp" />

If this doesn't work, try this...
<cfqueryparam value="#CreateODBCTime(now())#" CFSQLType="cf_sql_timestamp" />
