If you set the Application timeout to 14 days, then your server will hold the application variables in memory for up to 14 days of absolutely no activity without clearing them. Setting it to 14 days does not mean that after two weeks your application will restart. If you want to set an auto refresh on your application variables, to force them to refresh, then I would create a scheduled tasks that passes in a url var which could trigger the onApplicationStart from the onRequestStart
