if you are running 32bit windows then you will be limited to probably what your using now. if your using 64bit then go mental. if you have the physical servers load balanced already then additional instances probably wont provide any benefit to you. If you are load balancing just between instances, then more instances would be better if you are having any issues with instances becoming unresponsive or falling over. However remember you are also limited by number of CPU's/cores, additional instances will reduce the number of requests that your other instances can handle. The default setitng is 10 requests per cpu/core.
