    Many mails were sent to the Undelivered directory because the connection
to exchange server was down. Thus i was wondering if there is a way to
automatically store the mails in the spool directory first if the exchange
server is down?

Yes, in CF 4.5 and CF 5, there is a Spool Interval setting, which can be set
as low as 15 seconds. I wish there was a way to set this lower, but it seems
to be set in stone.
