I've used Quanta (for PHP, not CF development). It's not a bad editor, but it doesn't have the power of Studio. Once they offer (do they?) the ability to extend the IDE with user-defined toolbars and wizards (similar to VTML), it will be very cool. (I know they say they support CF, but I get the feeling that it won't be much more than recognition of file extensions and some color coding, similar to Studio's support for things like Java and Perl). I think it's a good option (analagous to using Homesite) but I think using CF Studio in a WINE/VMWare like session would be better.
