You need to do one of two things: 1) go the cfadmin and to the ODBC connection to your database (Access I am guessing) then turn off the "keep connections alive" until you are ready to go live with the whole thing.
2) copy the db, paste the copy and append a "_a" or whatever to the end - then go to the cfadmin (as above) and append the "_a" to the end of the path, wait for a while then work on the "old" version, then when you are ready swap them back...
