VMware would probably be my chosen option if I HAD to run virtual machines from my laptop. But I'd much rather just leave a windows machine with a network connection running in the back closet and connect with Terminal Server if I had the option. With a half decent broadband connection - I'd much rather TS into the a remote windows machine then try and run a local virtual install.
Bootcamp would IMO be far and away the best way to run a web/sql/cf server from a mac laptop if you won't have a broadband connection.
