I was thinking something like that might work.  I thought there might be
a "quick fix" where I wouldn't have to enter another variable in each
page with the cfhtmlhead tags, however this probably is the best way.

I assume that you're probably taking a ColdFusion variable and supplying
that to HTMLHEAD in order to do dynamic page titles.  If you store that
variable in the request scope, it will be available inside of the
onRequestEnd method within Application.cfc:

index.cfm
<cfset request.pageTitle = "My Page Title" />

Application.cfc
<cfcomponent>
  <cffunction name="onRequestEnd" access="public" returnType="void">
    <cffile action="append" file="#expandPath('hits.log')#"
output="#request.pageTitle#" />
