I'm going to give Brian's cfcdev-owner idea a shot (if it's doable).
If that doesn't work, I'll add a captcha to the sign-up page. That
may not stop automated sign-up, though, as you can also signup via
emailing the list.
I'd rather not switch to a closed list, as I think it would be a pain
to admin the sign-ups given how busy we both seem to be these days.

Brian, and all, sorry but I've been traveling so I've been a bit behind.
I see the spam as well but am unsure exactly what to do about it.
According to the settings, only subscribed members can post to this
list. So in theory it means that the spammers are signing up to send
the spam. That seems a bit incredible - but maybe they really are.
We _could_ consider switching to a closed list where folks have to ask
permission to join - or we could use a web based admin with CAPTHA,
but if spammers are going through the trouble now to sign up, that
won't stop them.
I suppose we could consider making the spam filters tighter for this
domain. Rob - what do you think?
