Java supports neither closures or callbacks. CF supports callbacks, but not closures. JavaScript supports closures (and therefore callbacks). Groovy, Ruby, ActionScript all support closures as well. Python supports quasi-closures via 'lambda', but that doesn't count for your question.
So pick a closure-supporting language that you're familiar with, and go read some docs. They'll all have examples, just as anyone's email reply would.
