I was trying to write everyone off list that was a part of this thread, but with the current number of people involved it seems more organization is required. Rather than write everyone directly with the same introduction and have a whole host of incongruous responses, writing here to first gauge response seems the best mode of initial communication.
 
I have spoken with David Mayerlen about this and will reiterate: we are in the process of setting up new hardware at our Data Centre in Toronto. This server will be Unix-based (haven't made a decision on the hardware (Intel or otherwise), so don't know the flavour) with Coldfusion MX Enterprise Edition. We currently have a Win2K server running ColdFusion 4.5.
 
It seems the main concerns with CFUG members are quality of service and depth of features. We have the service end tied up with the data centre (secure, redundant, scalable, etc.) and our technical team, but the depth of features (availability of logs, etc.) is something that we're interested in discussing. 
 
We are setting up the server with a live date of August 25th. Internally we will be using CF MX and MySQL but, as mentioned above, we have an existing Win2K server which could be used if Access or MS SQL was required.
 
We are setting up this server without anyone's involvement or interest, but your interest is an opportunity for us to offset the up front costs and to resolve your frustrations. Whomever is interested in working together with us can write to me directly with your requirements and expectations. I will create a combined list of requirements and mail back to each of you. Everyone can rate the list. We'll tally the responses and let you know what we can do and for how much.
 
Alternatively, we can offer co-location at the data centre, if that is preferable to shared hosting.
