Don't know if anyone else has answered, but here's my 0.02.  Putting a sensor in the radiator could cause the fins to spread and break over time.  Air rushing in and, if it's in front of the fan itself, it could give inaccurate readings.  If the fan is mounted on the engine side of the radiator, it'll suck the air through (puller style); if mounted on the grille side, it'll push air through (pusher style).  Pusher styles are, by accounts read, about 75% to 80% as efficient as a puller...you lose cooling capability with a pusher.  If the sensor is in the radiator and it's in front of the fan itself (pusher or puller), the sensor may actually be cooler due to the constant 'breeze' caused by the fan.
 
Depending on the engine you have, your heads may or may not have provisions for a water temp sender.  You may only have an outlet on the intake; if that's the case you'll have to come up with another location for the fan off/on sensor.  If the mfg suggests in the head, the sensor should be threaded and wouldn't fit in the radiator anyway.  Since water exits the engine via the thermostat, that should be the hottest point of water but the water temp at the head sensor shouldn't be significantly cooler.  Check http://auto.howstuffworks.com/cooling-system2.htm to see a motion example of water flow through an engine.

Howdy..
 
I'm putting an electric fan on my car this year, and bought a temp. sensor to control the on/off cycle of the fan.
The switch is supposed to be installed in one of the heads..
Wouldn't it be better to install the sensor in the radiator?
after all, the fan is blowing on the radiator, not the engine..
The switch is set at 192° on/ 182° off. I have a 180° thermostat.
